In the French capital there are maestros who know how to transform the most basic ingredients into transcendent delicacies. There are young artisans, trained in Paris or abroad, creating daring fusions of exotic flavours, in interesting, innovative spaces. But, where are the best of the best to be found? The immense choice of addresses makes it hard for anyone but a true insider to pick. Caroline Mignot has crisscrossed Paris in search of sugary delights and knows them all.
